1 medium spaghetti squash
2 Tbsp olive oil
Salt and pepper
1 lb. ground turkey
1 jar tomato basil spaghetti sauce (with no sugar added – be sure to read the labels for this)
¾ cup diced carrots
½ tsp cinnamon
½ tsp nutmeg
Splash of milk or half and half
Parmesan cheese
Instructions
Preheat the oven to 400 degrees
Cut the spaghetti squash in half lengthwise and drizzle with olive oil; add salt and pepper
Place the spaghetti squash cut side down on a baking sheet and bake until tender, about 35-45 minutes
While the squash is baking, pour the spaghetti sauce into a pan on the stove, adding the diced carrots, cinnamon, nutmeg, and milk/half and half, covering and letting it simmer over low-medium heat
While the sauce is cooking, brown the ground turkey on the stove over medium-high heat
Add the ground turkey to the sauce once it is fully cooked, letting the sauce simmer on low until the spaghetti squash is finished baking
After taking the squash out of the oven, flip each half over and use a fork to scrape out the insides
For serving, place 1 cup of squash in a bowl and top with the meat sauce, adding a sprinkle of parmesan cheese for flavor. Enjoy!
