Serves 4Ingredients- 1 lb. ground turkey
- Taco seasoning (ideally all-natural)
- Fresh baby spinach
- Red bell pepper
- Green bell pepper
- Onion
- 1 Tbsp olive oil
- Diced tomato
- Sliced avocado
- Hot sauce
Instructions- Cook ground turkey on the stove over medium heat until browned, chopping into small bits with a spatula
- Add in taco seasoning and with a splash of water to mix into the turkey, also over medium heat
- Remove from stove and set aside
- Chop bell peppers into long, skinny pieces and dice the onion
- In the same pan, cook peppers and onion in olive oil over high heat until onions turn translucent
- While the peppers and onion are cooking, place a bed of spinach into a single-serving sized bowl and place ¾ cup of 1 cup of the taco meat on top
- Add the peppers and onions to the bowl when they finish cooking, then add chopped tomato, avocado slices
- Drizzle with hot sauce for a little extra flavor and enjoy!
