Fabulous Stir-Fry (Diet Approved)

Ingredients
1 lb. chicken breast | 4 Tbsp olive oil |
2 cups broccoli florets | 1 red bell pepper, diced |
1 green bell pepper, diced | 1 cup mushrooms, sliced |
? large onion, diced | 1 Tbsp garlic, minced |
1 Tbsp fresh ginger, grated | 2 Tbsp low sodium soy sauce |
Instructions
1.
Heat 2 Tbsp olive oil in a pan over medium heat

Cut the chicken breasts into small pieces and add to the pan, covering with a lid until each piece turns white
3.
Remove cooked chicken from pan and set aside in a bowl
4.
Add 1 Tbsp olive oil to pan, and add the onions and garlic, stirring occasionally until the onions began turning translucent
5.
Add remaining 1 Tbsp olive oil and the rest of the vegetables to the pan (broccoli, red pepper, green pepper, mushrooms), cooking for 5-6 minutes
6.
Add cooked chicken back into pan with all the vegetables, and throw in the soy sauce and fresh ginger, stirring until the chicken starts to brown
7.
Remove from heat and enjoy 1 cup for lunch, saving the leftovers for the rest of the week!
