2 Boneless + Skinless Chicken Breasts
1 Medium-Sized Lemon
4 Cloves Garlic
1.5 Tbsp Olive Oil
Fresh Shaved Ginger (for a little extra zing)
Salt + Pepper
6 Cups Fresh Spinach
Instructions
Mince garlic
Add garlic and olive oil to pan over medium-high heat on stove; let simmer for 2 minutes
Cut lemon in half and squeeze one half into the pan with garlic and olive oil
Poke chicken breasts with a fork in several places on both sides, and place in pan with garlic, olive oil, and lemon juice
Sprinkle salt and pepper on chicken in pan
Cover the pan with a lid and lower heat to medium-low; let simmer until each breast has turned white, then turn over for other side to simmer for 4-5 more minutes
Once you’ve turned the chicken to the other side, squeeze the other half of the lemon onto it and add more salt and pepper
Turn over 1-2 more times until each side gets a little browned and crispy-looking
Remove from heat; let cool for 4-5 minutes
While chicken is cooling, place the spinach into the pan, leaving whatever oil, lemon juice, or garlic is leftover in the pan
Let spinach simmer on medium-high heat for 3-4 minutes or until it starts to wilt; stir occasionally until it has all wilted and is a nice dark green color
Remove from heat and place next to chicken on a plate
