Apricot Ginger Bellinis

Ingredients
COCKTAIL: | 3 oz Lime juice |
4 oz Ginger syrup | 1 15 oz can of apricot halves in syrup, drained |
1 bottle of Champagne | |
GINGER SYRUP: | 4 oz fresh ginger |
1 cup sugar | 2 cups water |
Instructions
1.
To make the ginger syrup: Slice the ginger into thin slices, then chop those slices into smaller chunks. In a small saucepan, heat the ginger, water, and sugar. Stir until mixed, bring to a boil, then reduce to simmer for 45 minutes.

Remove from heat and let cool to room temperature. Strain the syrup through a fine mesh strainer. Syrup can keep for 2 weeks in the refrigerator.

Pour the sugar syrup, lime juice, and apricot halves in a blender; process until smooth. Spoon 2 Tbs of apricot puree into each champagne glass.

Top each glass with champagne and stir gently.
